AINIA is investigating new alternative sources of protein and milk analogues

Spain. – Ensuring a healthy life and promoting well-being at all ages is essential for sustainable development AINIA is working on the development of new sources protein alternatives and milk analoguesrapid detection of Listeria monocytogenes, AI-based food quality control to verify the effectiveness of bioactive ingredients against Covid-19.

And as a result of the global health crisis caused by Covid-19, numerous studies have been launched to learn more about this respiratory virus. From the technological center, located in Valencia, an in vitro cell model was developed to verify the effectiveness bioactive ingredients against SARS-Cov2.

It is a cellular model that enables simulation immune system of the human respiratory tract, in order to be able to identify and evaluate bioactive ingredients that reduce the inflammatory effect caused by respiratory viruses such as SARS-Cov2. AINIA continues to work in this direction to advance knowledge about the effects of various compounds on the immune system of the respiratory tract.

Development of food and AINIA protein alternatives

AINIA is currently working on the development of dairy analogues from the perspective of new advanced ingredients as well as the design of new concepts plant-based products able to match the current needs demanded not only by consumers, but also by the planet.

Specifically, the research will focus on achieving milk analogues (milk, yogurt, cheese) that manage to imitate not only the sensory but also the nutritional characteristics of the reference products. For this purpose, the FerVeLact project, co-financed by FEDER wallpapers and the Government of the Community of Valencia (IVACE), uses local plant products from the Community of Valencia (tufa, almond, lupine, flax) as raw materials.
