Angelopolitano: Mexican cuisine with an authentic Pueblo flavor

In 2010, traditional Mexican cuisine UNESCO included it in the Representative List Intangible cultural heritage of humanitybecause Mexican cuisine is made up of colors, flavors and unique culinary experiences.

It is a cuisine with a cultural, historical and original manifestation due to its products, techniques and procedures. Mexican culinary art is very elaborate and full of symbols.

In this sense, Puebla is full of colors and flavors and has a wide variety of dishes that delight visitors. It is characterized by an abundance of ingredients, complex preparations and dishes full of elements, all on the same plate.

The benchmark for Puebla cuisine is Angelopolitano, a place that has taken family recipes but given them a more contemporary twist.

It was opened on May 5, 2013 by chef Gerardo Quezadas, and recently turned 10 years old. It is located on Puebla street, in the iconic Roma district of Mexico City.

“In these 10 years, we have learned and continue to learn to provide unique and unforgettable gastronomy, created with our taste and creativity, giving each dish the place it deserves,” says chef Quezadas.

Basic dishes and ingredients of Mexican cuisine

Since its founding, Quezadas has been dedicated to preserving traditional recipes and maintaining the essence of the flavors of the state of Puebla. Its goal is to provide rich experiences to consumers.

It is one of the traditional dishes craftsman’s mole, which is prepared in the kitchen with a hint of home and a family recipe of several generations. “It is a dish that we prepare according to a recipe that originates from my great-grandmother, my grandmother, my mother and me,” notes the Chef.

Since the importance that the restaurant sector currently has is undeniable, innovation becomes relevant. For this reason, and according to Quezadas, in Angelopolitan:

  • Mole poblano will be cooked with other types of proteins.
  • Ingredients such as fig, apricot and jamaica will be added to various creations.
  • Mushrooms will be the highlight ingredient.
  • Dishes will be developed from organic ingredients whose suppliers will be small producers.
  • Vegan and vegetarian alternatives will be offered.

And in the culinary world, trends come and go, motivated not only by the demand for new and fresh proposals, but also by the evolution of lifestyles, the search for better health and the need to take care of the planet.

Sustainable cuisine, a big trend

Vegetables, ethical production, return to the origin, and sustainable and traditional cuisine are some of the trends that will be seen in the culinary world in 2023.

It is well known that sustainability is a growing issue. But consumers will no longer only aim to consume less processed foods, but rather sustainable animal products or vegan versions.

In the case of sustainable cuisine, a long-term trend or a mega trend, its three pillars are: consumers, the environment and the economy.

According to the UN, sustainable cuisine is about promoting the natural and cultural diversity of the planet, while promoting and promoting environmentally responsible food consumption.

Likewise, according to Unilever Food Solutions’ Future Menu Trends 2023 report, the four aspects that will influence consumption locally and globally are:

  • Conscious choices
  • A healthier life
  • A kitchen renaissance
  • Pleasant experiences

Understanding how consumer habits differ from generation to generation is encouraging creativity and inspiration. The challenge is within to create something unique and different experience“, points out chef Quezadas.

Furthermore, it is very important to know that the success of any culinary creation depends on the quality of raw materials, taste, variety, and the correct ratio of quality and price.
