Spain. – Antioxidant capacity of pistachios It is higher than most foods known for their antioxidant power, such as blueberries, pomegranates, cherries and beets, according to a recent study by Cornell University (USA).
In addition to being one of the main ingredients of the Mediterranean diet, pistachios are also characterized by the fact that they are one of nuts most important due to its protective effects against most chronic diseases, such as:
- Cardiovascular diseases
- Neurodegenerative diseases
- Some types of cancer
Pistachios have a lower proportion of fat and energy, with a high proportion of fiber (both soluble and insoluble), potassium, vitamins E and K, phytosterols, certain carotenoids, such as lutein and zeaxanthin, and phenolic compounds, which explain its ability to protect against numerous diseases.” explained Ramon Estruchdoctor at the Department of Internal Medicine of the Hospital Clinic in Barcelona.

How pistachios get their antioxidant properties
In order to better understand why pistachios are one of the most important sources of antioxidants, scientists analyzed different ways and compared the effects and quality of nuts compared to other foods, and this work was published in the scientific journal “Nutrients”.
According to a study published in Nutrients, to measure the antioxidant potential of pistachios, experts used two different methods:
- Oxygen Radical Absorbance Capacity (ORAC)
- Cellular antioxidant activity (CAA)
“When we compared the values of other foods for their high antioxidant content using the same methods, we observed that the antioxidant activity of pistachios is higher than that of other foods,” commented Rui Hai Liuprofessor of food science at Cornell University.
The combination or interaction of these beneficial antioxidant, bioactive compounds, along with other nutrients in pistachios, is likely what contributes to the many health benefits observed in pistachio studies in recent years.
